Is Teflon (PTFE) Cookware Safe?
The FDA permits it for food contact, with a caveat about heat. Teflon is the trademarked brand name for PTFE, which Health Canada says is the most commonly used PFAS in nonstick coatings. The FDA says the manufacturing process vaporizes off virtually all the smaller PFAS molecules that could migrate, and that studies show negligible amounts of PFAS in the coating can migrate to food.
The risk the sources agree on is overheating. Health Canada says nonstick cookware may produce irritating or poisonous fumes if heated to high temperatures, such as an empty pan left on a burner. A medical reference on the National Library of Medicine’s bookshelf says PTFE releases fumes from 260 °C (500 °F), though symptoms in people generally do not begin until 350 °C (662 °F). The National Capital Poison Center says the illness, often called Teflon flu, is generally mild and self-limiting, but can be more serious in people with lung problems and can be fatal to pet birds.
PFOA, a PFAS once used to make nonstick coatings, has been phased out, Health Canada says, and under the EPA’s PFOA Stewardship Program most participating companies stopped making and importing long-chain PFAS. PTFE itself still counts as a PFAS for Minnesota’s pollution control agency, which says it is prohibited from use in cookware there.
