Not pottery. It is a thin silica layer cured onto metal, a sol-gel, and ceramic is a marketing word for it rather than a specification. Two pans both sold as ceramic non-stick can be different formulations with different binders.

The silica layer is not a fluorochemical, which is the honest answer to the question people arrive with. It is also not the whole product. What is undisclosed in this group is the binder and any release agent, and a pan sold as ceramic can still carry a fluorinated additive without naming it.
